Fregula Sarda is one of the typical dishes of Sardinia. The most famous is certainly Fregula with clams. Today I prepared it with jumbo shrimp. Delicious.
There are many variations of Fregula with jumbo shrimp, with fresh tomato, with canned tomato as I prepared it, or even white without sauce.
Some prefer it drier and some prefer it more soupy, to be eaten with a spoon. To be honest, I prefer the fregula with jumbo shrimp nice and soupy. A sort of soup.
The addition of chili is optional. I added it at the end, but it can be omitted easily.

Ingredients
- 18 oz Fregula Sarda
- 6 cups fish broth
- 8 jumbo shrimp
- as needed chopped garlic and parsley
- 1 glass white wine
- 14 oz tomato
- as needed oil and salt

Steps
I cleaned the jumbo shrimp, removing the legs and intestines. Then I separated the heads from the bodies. In a saucepan, I sautéed the shrimp with oil, chopped garlic, and parsley.
I added the tomato and let it cook for about 10 minutes, adjusting with salt.
After about 10 minutes, I added the Fregula and let it evaporate with the wine.
Separately, I prepared the fish broth and continued to cook the Fregula for another 10 minutes, adding the hot broth.
