Sweet-and-sour recipes like Sweet-and-sour chicken with onions or Sicilian-style sweet-and-sour chicken have always been my favorites. When I was a child we used to pick chestnuts on Etna with my uncles and one thing I remember very well from those days: lunchtime! A fixed stop during our autumn outings was lunch at a trattoria — which I don’t know if is still open — but the food was amazing!! My favorite dish as an 8-year-old was the sweet-and-sour rabbit; I loved it and although my mother tried and tried to cook it like they did in that small rustic place, I never found that exact taste. A few days ago, however, I went into the butcher to buy some chicken breast and came out with about 2.2 lbs of rabbit legs; my children had never eaten rabbit because, when I was young, I had adopted a little rabbit and loved it so much that I had erased from my mind the possibility that rabbit could be food… Anyway, the rabbit had been bought and I decided to make it again in the Sicilian sweet-and-sour style, just like I used to eat it as a child, and in the end I recovered that flavor I remembered with nostalgia: “the sweet-and-sour rabbit of Caterina” and “Da zia Caterina” was actually the name of the trattoria I told you about!! Rabbit meat was a pleasant rediscovery for me and a tasty discovery for my kids, and I think I’ll start cooking it again because they really liked it. Ingredients to make the sweet-and-sour rabbit

  • 2.2 lbs Rabbit
  • 2 Onions (large)
  • 4 Carrots
  • to taste Salt
  • to taste Extra-virgin olive oil
  • 1/2 cup Vinegar (or less, to taste)
  • 1 cup Water
  • 4 leaves Bay leaves

  • Stovetop

Preparation of the sweet-and-sour rabbit

  • Let the rabbit marinate for 30 minutes in water, vinegar and bay leaves.
    After the time has passed, sauté the onions and carrots in plenty of extra-virgin olive oil, then add the pieces of rabbit and brown them as well. Once they have been lightly blanched, add the marinade and adjust the salt, lower the heat and let cook for about an hour, adding a little water from time to time if necessary. The sweet-and-sour rabbit is ready: arrange everything on a serving platter and serve hot with its onion and carrot accompaniment.

Storage and Notes

Sweet-and-sour rabbit can be prepared in advance and reheated as needed; it keeps in the refrigerator in a sealed airtight container for 2 days.
