Homemade hamburgers, grandmother’s recipe with onion. The cheese-stuffed hamburgers or the classic onion hamburgers are a meat main course that is tasty, flavorful and light, suitable for everyone. Excellent for a ketogenic diet, they are a highly protein-rich food, but also a dish suitable for all, since they are very soft, juicy and full of flavor. Perfect for a family dinner to make the kids happy, or for a night with friends — use them to fill delicious and soft hamburger buns, and you will see how delicious they are! Serve them with delightful air-fryer fries, and you will have complete success at the table! This homemade hamburger, rich and much tastier than fast food, will win you over at the first bite, because besides the onion that releases its juices into the meat, there is another ingredient that enriches the flavor and ensures tenderness: spreadable cream cheese! For preparing these onion hamburgers use a variety of onion that cooks well when fried, such as white onion, sweet and tender enough; alternatively use red onion or the classic green spring onion. I almost forgot: the mixture for these hamburgers is different from the mixture for classic meatballs; in fact it is gluten-free because the hamburgers do not contain bread and it is made without eggs.

Ingredients to make onion hamburgers
- 1 lb 5 oz ground beef
- 3.5 oz (about 1/2 cup chopped) white onion
- 3.5 oz (about 1/3 cup) spreadable cream cheese
- 1.4 oz (about 1/3 cup) grated Parmesan (or Grana Padano)
- to taste salt
- to taste pepper

Preparation
For these hamburgers I used a suitable mold — I’ve linked it among the tools (above). If you don’t have it, use a ring mold about 4–4 3/4 in (10–12 cm).
Place the onion in the blender jar and chop it very finely. Gather it in a bowl together with the grated cheese, salt and pepper. Mix,
add the spreadable cream cheese, which together with the onion will make them very soft and flavorful. Mix the mixture very well and with the appropriate mold, start forming the meat patties.
Press with the tamper and place the hamburgers on parchment paper. Proceed in the same way with the rest of the mixture until all hamburgers are formed.
Place the hamburgers on a very hot grill pan, lower the heat and cook them 2 minutes per side to brown the second side; raise the heat at the end of cooking. The hamburgers are ready — bring them to the table and serve them hot. (The following photo shows the cooking method for the stuffed hamburgers.)
Storage notes and tips
Store the hamburgers in the fridge wrapped in plastic wrap for a maximum of two days, or freeze them on a tray and then transfer them to food bags. Consume within a couple of months and thaw in the fridge before cooking.
