Bruschetta topped with robiola and yogurt cream and smoked salmon, light and tasty. To prepare a quick and healthy dish or a chic, delicious appetizer, sometimes a few simple steps and quality ingredients are enough! A few days ago the stifling heat took away my desire and strength to spend time at the stove; in the fridge I had my smoked salmon, robiola and a little Greek yogurt, and I improvised these light bruschetta with robiola and yogurt cream, scented with lemon and pink pepper. These are original and tasty bruschetta that won over the whole family. For them I chose five-grain bread and, of course, smoked salmon, which I love and have always eaten. In just 15 minutes I put an exceptionally tasty dish on the table, which I later served again as an appetizer on an evening of fish with friends and it won everyone over. Ingredients for making salmon and robiola bruschetta
- 7 oz smoked salmon
- 7 oz robiola cheese
- 1/3 cup Greek yogurt
- 1 pinch salt
- as needed extra virgin olive oil
- 1 lemon (organic, juice and zest)
- as needed pink peppercorns
- aromatic herbs (marjoram, thyme or mint)
- 4 slices five-grain bread

Steps to make salmon and robiola bruschetta
To prepare the salmon bruschetta, slice the bread about 3/16 in thick (or buy pre-sliced pieces). Toast them in a pan or on a hot griddle on both sides so that a golden crust forms but they don’t burn. Let them cool slightly or completely. Prepare a cream by mixing robiola, Greek yogurt, a pinch of salt, one tablespoon of lemon juice, a sprinkling of pink peppercorns and a few strips of lemon zest. Spread the cream generously over the bread slices, lay the smoked salmon on top and garnish with pink peppercorns, lemon slices and small sprigs of thyme or marjoram.
Serve immediately.
