Ingredients to make the eggplant savory pastry with puff pastry
- 1 roll puff pastry
- 1 eggplant (large)
- to taste salt
- to taste extra virgin olive oil
- 3.5 oz cheese (sliced, caciotta, provola, emmental, gouda…)
- 3.5 oz cooked ham
- to taste egg (beaten for egg wash)
- to taste sesame seeds (for finishing)

Steps to make the Quick savory puff pastry with eggplant
Rinse the eggplant, peel it and slice it into slices about 3/8 inch thick. Arrange them on a baking sheet lined with parchment paper, drizzle generously with oil, sprinkle with salt and bake at 392°F for 20 minutes, turning halfway through. Remove from the oven and let them cool completely.
Unroll the puff pastry, lay out the eggplant slices leaving a border free to fold over, and top with a melting cheese and the ham.
Fold the short sides toward the center, seal the edges, brush with beaten egg, sprinkle with seeds and bake at 392°F for 20-25 minutes.
Remove from the oven, let it cool slightly and serve. I recommend enjoying it just made, but leftovers can be stored in the fridge for 24 hours and reheated before serving.
You can prepare the savory pastry in advance and store it covered in the fridge for 24 hours. Before baking, brush with beaten egg and sprinkle with seeds as desired.
