Crispy fried zucchini in the air fryer. The crispy and golden air fryer zucchini are a tasty and light side dish you can bring to the table on any occasion. Great as a side for a meat or fish menu, they can be enjoyed on a plate or used to fill sandwiches, focaccias and flatbreads. The air fryer fried zucchini have a light, egg-free breading that guarantees a golden crust and a unique flavor, almost as if the zucchini were fried, when in fact they are not. Like all the quick summer recipes on my blog, this one is light, simple and tasty and requires very few ingredients. Zucchini, salt, oil, breadcrumbs, Parmesan and fine durum semolina will help you bring to the table a delicious and economical dish just like those in my collection of Easy and economical recipes. Ingredients
- 2 zucchini (large)
- 2 tablespoons breadcrumbs
- 2 tablespoons grated Parmesan (or Grana Padano)
- 2 tablespoons fine durum semolina
- to taste extra virgin olive oil
- to taste salt

How to cook the air fryer zucchini
Let’s prepare the air fryer zucchini. Rinse the zucchini, remove the ends and cut them into strips of the same size using a sharp knife. Gather them in a bowl, add a good drizzle of oil and mix so they are well coated. Add the grated cheese, breadcrumbs and semolina and mix.
Arrange the breaded zucchini in the air fryer basket in an orderly single layer without overlapping (this is essential), sprinkle them with any remaining breading left in the bowl, add another drizzle of oil and cook at 392°F for 15-20 minutes or until they reach the desired golden color.
Our air fryer zucchini are ready, lightly sprinkle with salt and all that’s left is to enjoy them immediately, still hot, fragrant and crispy.
