Ingredients for making Pasta with Butter and Cherry Tomatoes

  • 14 oz pasta (spaghetti or linguine bronze-cut)
  • 14 oz datterini cherry tomatoes
  • 4 tbsp butter
  • to taste salt
  • 1 pinch dried oregano
  • 1 pinch garlic powder
  • to taste bread (toasted bread crumbs)
  • to taste basil

Preparation of Pasta with Butter and Cherry Tomatoes

To make pasta with butter and cherry tomatoes, choose either very sweet cherry tomatoes or datterini; the recipe is otherwise easy and is prepared while the pasta cooks.

  • Rinse the cherry tomatoes, cut them in half and place them in a small baking dish with a pinch of oregano, a pinch of garlic and salt to taste. Add half of the butter and cook in the air fryer at 392°F for 20 minutes (or in a convection oven using the same settings),

  • breaking them and stirring them from time to time. While the tomatoes cook, bring the water for the pasta to a boil.

  • Take the tomatoes and blend about two-thirds of them. Melt the reserved butter in a pan, add the pasta cooked until al dente and a little of the cooking water, along with the freshly prepared sauce.

  • Stir again and plate, garnishing with the remaining cherry tomatoes, basil and toasted stale bread crumbs, previously toasted in the air fryer or in a pan.

    Serve immediately.

Storage notes and tips

Leftover pasta (although it’s better not to have leftovers) should be kept in the refrigerator and to reheat it just sauté it in a non-stick pan. The sauce can be stored in the fridge for two days, but it should be heated before use so that the butter melts again.
