It’s excellent on bread, bruschetta, pizza and especially with pasta. Perfect for making warm dishes and, above all, quick summer pastas like cold pasta with arugula pesto, tuna and cherry tomatoes. In summer, cold first courses are an essential must, so I also prepare cold pastas to take to the beach, to the office or to eat after a long day out. Ingredients to make cold pasta with arugula pesto
- 6 cups arugula
- 1/2 cup almonds
- 3 sundried tomatoes
- 1 oz pecorino
- 2 oz Parmesan
- 1/2 cup extra virgin olive oil (about 3.7 fl oz)
- 1 tablespoon white wine vinegar (or apple cider)
- 1.1 lb pasta (short)
- 2 2/3 cups cherry tomatoes
- 5 oz tuna in oil (drained (about one 5 oz can))
- to taste salt
- to taste extra virgin olive oil

How to make cold pasta with arugula pesto
Cook the pasta, drain it al dente and transfer it to a large baking dish. Add a generous drizzle of olive oil and let it cool, stirring often.
To prepare the pesto, start by toasting the almonds in a pan so they brown a little. Let them cool and then place them in the blender with the sundried tomatoes, the cheeses and the oil; blend as much as possible.
If the mixture has warmed up, let it cool before adding the arugula and one tablespoon of vinegar (which will slow the oxidation of the arugula). Blend again until you obtain a smooth sauce.
The pesto is ready: mix it with the pasta together with the drained tuna and the cherry tomatoes rinsed and halved. Toss everything together and enjoy.
This prepared pasta is very good at room temperature, but you can also store it in the fridge for a few hours and consume it the same day.
