Ingredients to make oven-baked citrus prawns
- 12 prawns (frozen)
- 2 oranges
- 2 lemons
- 3 tbsp white wine
- to taste salt
- to taste pink peppercorns
- to taste extra virgin olive oil
- to taste parsley

Preparation
To prepare whole frozen prawns with citrus, let them rest for a couple of hours in the refrigerator so they begin to thaw. Then rinse them under running water and pat them dry. Use scissors to remove the antennae, make a small cut just below the head, slightly loosen the shell and use a toothpick to pull out the intestinal vein. Arrange the prawns in a baking dish, pour the juice of one orange and half a lemon, drizzle with olive oil, pour the wine, add a few pink peppercorns and a light sprinkle of salt, then cover with plastic wrap. Let them marinate 30 minutes in the fridge, then remove the plastic wrap and bake in a preheated oven at 356°F for 20 minutes.
Remove from the oven, let cool for a couple of minutes, sprinkle with chopped parsley and serve with their cooking juices.
Storage and tips
You can also make this recipe with fresh prawns and it will be even better. I recommend eating the prawns as soon as they are prepared while still hot; leftovers can be stored in the refrigerator for 24 hours in an airtight container and reheated before consumption.
