Ingredients to make Mediterranean Chicken Bites

  • 2.2 lbs chicken breast
  • 2 cups cherry tomatoes
  • 1 clove garlic (or a pinch of garlic powder)
  • to taste parsley
  • to taste salt
  • as needed extra virgin olive oil
  • 1/4 cup raisins
  • 2 tbsp capers (desalted or in oil)
  • 2 oz Taggiasca olives (in oil or in brine)
  • 2 1/2 tbsp pine nuts
  • 1/3 cup sweet white wine (Malvasia)
  • as needed water
  • as needed all-purpose flour

Steps to make Mediterranean Chicken Bites

  • To make Mediterranean chicken breast, start by cutting the chicken breast into pieces, then coat them in flour and mix so the flour adheres well to the meat. Pour a good glug of oil into a nonstick pan, heat it and add the bites; cook over high heat until they are nicely browned, then transfer them to a container.

  • Rinse the cherry tomatoes and cut them into quarters. Heat a pan with a drizzle of oil and the garlic, add the cherry tomatoes and season with salt (you can use the same pan used for the chicken, without rinsing it). Cook for a few minutes and add the raisins, olives, capers and pine nuts.

  • Cook for a few minutes and add the chicken bites, stir and pour in the white wine.

    Once the wine has evaporated, add a little water to finish the cooking, then adjust the salt.

    To adjust the consistency of the sauce, add water as desired and allow the mixture to come back to a simmer.

  • Add a bit of parsley and the Mediterranean chicken breast is ready to enjoy. You can prepare it a few hours in advance and in that case simply pour another glass of water over the cold chicken and bring it back to a boil while stirring frequently, then let it rest briefly before serving.

    Leftover chicken should be stored in the fridge in a sealed airtight container for up to 2 days and must be reheated well with a little water before serving.
