Original American apple pie — Grandma Duck’s pie recipe. The original apple pie recipe, as Americans make it, a dessert with apples that, like the apple strudel, is known worldwide and is perfect for breakfast, snack time, or any moment of the day. Do you remember the wonderful pie that Grandma Duck put to cool on the windowsill and that Ciccio kept devouring? Or the pies that Yogi Bear stole from park visitors? Well, it really exists and it’s the famous apple pie, the American apple pie.
A simple dough without butter, eggs, or yeast just like a pasta matta and similar to the base of strudel or Rocciata umbra, creates a fragrant, crunchy shell that contains a harmonious, aromatic filling of apples and cinnamon. The butter-free apple pie we’ll make today is easy and quick, and it’s the right solution for those who cannot consume butter; it’s also a vegan apple pie. Naturally, substituting butter for the oil will give you the original American apple pie with an extra buttery touch. I received this recipe from Carol, an American cousin of my dad, with whom I’m always in touch, and I thank her very much because the American apple pie has become the family’s favorite cake — the one that disappears in an instant! Ingredients to make the simple apple pie

  • 5 Granny Smith apples (or large green apples)
  • 1 teaspoon Ground cinnamon
  • 1 tablespoon Honey (or sugar)
  • 50 g Butter (or 30 g seed oil)
  • 1 Lemon (organic, juice and zest)
  • 1 tablespoon Flour (or breadcrumbs)
  • 500 g Flour (Type 0 (about 4 cups))
  • 200 g Water (cold (about 3/4 cup / 7 fl oz))
  • 150 g High-oleic seed oil (or 170 g butter)
  • 1 teaspoon Salt (level)

  • 1 Baking pan 10-inch diameter
  • Oven
  • Bowl
  • Knife

Preparation of the American apple pie

  • For the filling.

    Peel the apples, remove the cores, cut them into pieces, then add the cinnamon, lemon juice, grated zest, honey (or sugar — if the apples are not very sweet, use more), the flour, and the butter (or oil if you cannot consume butter).

  • Mix everything together and set aside.

    For the dough.

    Put the flour into a bowl, then add the water, salt, and the oil (or butter if you prefer). I love the flavor you get using high-oleic sunflower seed oil (available in supermarkets), which also has a higher smoke point than common oil and is healthier. Work the dough in the bowl and then finish kneading on the work surface.

  • Knead until you have a smooth, homogeneous dough, form it into a ball, wrap it in plastic wrap and let it rest for at least 1 hour. Then divide it into two equal parts. Roll out one half into a disk about 1/2 cm thick and line a 26 cm diameter pan with it.

    Fill the pan with the apples, roll out the other portion of dough and cover the top,

  • taking care to seal the edges. Make cuts in the center to let steam escape during baking and bake for 45 minutes at 338°F. Remove from the oven, brush with milk and sprinkle with sugar. Return to the oven briefly and then let rest a bit with the oven turned off but still warm.

  • Take out of the oven and set aside; to be enjoyed at its best the pie needs a long rest of at least 6 hours.

    You can eat the pie plain, or serve it with vanilla ice cream or a vanilla cream.

  • Store the apple pie at room temperature, covered with plastic wrap, and consume within 24 hours.
