Aromatic Red Mullet Skewers

Ingredients

  • 12 large red mullets
  • 2 1/2 oz breadcrumbs
  • 1 oz grated Parmesan cheese
  • 1 egg
  • zest of one organic lemon
  • 2 organic lemons
  • to taste salt
  • to taste garlic powder
  • to taste thyme
  • to taste marjoram
  • to taste chives
  • to taste extra virgin olive oil

Steps

  • Clean the red mullets by removing the head, innards, and spine.

  • Season the red mullet fillets with a bit of salt.

  • Incorporate the grated Parmesan cheese into the breadcrumbs, mix.

  • Season with spices: garlic powder, thyme, marjoram, chives.

    I often use dried spices that are always in the pantry.

  • Add the zest of an organic lemon and an egg.
    Knead everything together.

  • Cut the two lemons into not-too-thick slices. They will be used to insert into the skewers.

  • On each red mullet fillet, sprinkle a bit of aromatic breadcrumbs, roll it up.

  • Form skewers with three red mullet rolls and place lemon slices between each roll.

  • In a baking dish, pour a bit of extra virgin olive oil and place the prepared rolls inside.

  • Sprinkle more aromatic breadcrumbs on top of each roll.
    Bake at 392°F for 20 minutes.
