Onion Mini Pizzas perfect for a delicious snack or a birthday party buffet. Very soft and stringy! Have you tried the super soft bakery-style mini pizzas or the Sardinian slice pizzas? Two equally delicious recipes that I recommend trying along with the Sicilian mini pizzas. The recipe I propose today is made in a few hours, with these quantities you get about 10 mini pizzas; you can also enrich them by adding olives and parmesan, you can also decide to make a single pizza on a baking sheet.

Ingredients
- 5 1/2 cups all-purpose flour
- 2 1/2 tsp salt
- 2 cups water
- 2 tsp dry yeast
- 2 onions
- 7 oz mozzarella
- to taste oregano
- 2 onions
How to Make Onion Mini Pizzas
Pour the flour and yeast into the stand mixer, then add the water and salt; turn on the dough hook at medium speed.
Transfer the dough onto the workbench and make folds, form a smooth and soft dough ball.
Place the dough in a large and well-oiled bowl, and let the dough rise for about 2 hours.
After the resting time, make small balls of about 4 1/2 oz each, let them rise for 30 minutes covered and spaced apart.
After the second rise, press the small dough balls with your fingers to form the shape of mini pizzas.
Meanwhile, slice the onion, let it soften in a pan with a splash of oil, season with salt and pepper. If necessary, add a little hot water, continuing to cook for about 6 minutes.
Take the mini pizzas and top them with the onion and a drizzle of olive oil. Bake at 392°F (200°C) for about 15 minutes.
As the final step, remove from the oven and top with cheese, then bake again until the cheese melts. Serve hot and stringy.
