Ingredients for the peach puff pastry wedges

  • 4 peaches (large and fairly ripe)
  • 1/3 cup peach jam (or orange marmalade)
  • 2 tablespoons sugar
  • as needed powdered sugar
  • as needed sliced almonds
  • 2 rolls puff pastry
  • 1 tablespoon breadcrumbs (or cookie crumbs)

Preparation

  • To make the peach puff pastry wedges, choose peaches that are ripe but not too soft; peel and slice them. Unroll the puff pastry.

  • Spread peach jam or orange marmalade over the pastry (I prefer orange marmalade because it is more aromatic) and then arrange the peach slices on top.

  • Sprinkle with cookie crumbs or breadcrumbs so that the excess moisture from the peaches is absorbed, scatter one or two tablespoons of sugar over them (depending on how sweet the peaches are), and cover with another sheet of pastry.

  • Fold and seal the edges of the pastry and, with a sharp knife, make incisions to form the wedges.

  • Brush with beaten egg, sprinkle with sliced almonds and bake in a preheated oven at 392°F for 20–25 minutes in a conventional (no fan) setting. Remove from the oven, let cool slightly and serve after dusting with powdered sugar. If necessary, if the wedges have stuck together, run a knife between them to separate. The peach puff pastry wedges can be enjoyed warm or at room temperature.

Storage and tips

Store the peach puff pastry wedges at room temperature, covered with a cotton cloth, and consume within 24 hours.
