Easter Ring (Puff Pastry Tortano)
Delicious and rich, it is customary after Lent to set our tables with substantial foods. Not everyone has the time to make the classic tortano and wait for the leavening.
That’s why I devised this method, which, besides being faster, is also more delicate on the palate.
You can fill it as you like, even with vegetables such as spinach, ricotta and hard-boiled eggs, or with a varied assortment of cold cuts, always accompanied by hard-boiled eggs which are the symbol of Easter.
Note: if you are diabetic you can use whole-wheat puff pastry.

Ingredients
- 1 puff pastry (round)
- 2 hard-boiled eggs
- 1 egg (for brushing)
- 7 oz (about 3/4 cup) ricotta
- 7 oz smoked provola (provola affumicata)
- 7 oz smoked pancetta (diced)
- 7 oz (drained) mushrooms in oil (drained)
- to taste poppy seeds (or sesame seeds)

- 1 Bundt pan 10.25 in bundt pan
- 1 Brush (silicone)
- 1 Oven electric
- 1 Small saucepan
Steps
Hard-boil the eggs in a small saucepan and peel them,
Unroll the puff pastry and make a cross in the center. On the edge make cuts about 2 in deep and spaced about 4 in apart. This will allow you, after filling, to fold the edges inward cleanly without creating awkward folds.
Now transfer it into a previously buttered and floured bundt pan, making sure the central portion of the pan fits into the cross made in the center of the pastry.
Now we’ll fill the ring together.
Let the oil-packed mushrooms drain in a sieve.
In the lowest part, i.e. in contact with the puff pastry, spread the ricotta with the back of a spoon; next place the hard-boiled eggs cut into wedges, then add the rest of the ingredients on top.
Now fold the excess pastry: fold the inner excess outward and the outer excess inward, crossing them over each other.
The filling will appear between one pastry wedge and the next.
Finally, beat the egg and brush everything with it, then sprinkle with poppy seeds or sesame seeds as desired.
Bake in a preheated oven at 356°F for about 20 minutes, or until golden.
