Ingredients

  • 1 2/3 cups flour (the one you usually use)
  • 3.4 fl oz water
  • 2 tbsp extra virgin olive oil
  • 1 pinch salt
  • 7 oz ricotta
  • 5.3 oz provola (cheese)
  • Half teaspoon salt

Steps

  • Pour the flour into a bowl, add the water and the oil, a pinch of salt and mix well, then divide the dough into two portions.

  • Roll out one half thinly and line a 9.5-inch baking pan.

  • Work the ricotta with the salt in a bowl, add the provola cut into pieces, add the egg and mix well, then pour everything into the pan.

  • Cover with the other half of the dough, seal the edges and bake at 392°F for about 30 minutes, until golden.

  • Remove from the oven and let cool before slicing.
