A base of sponge cake (pan di Spagna) or jelly-roll sponge (pasta biscotto) soaked with rum. A generous layer of lemon pastry cream. Optionally add small pieces of fresh pineapple or strawberries. Cover with small pieces of sponge cake.

- 2 1/8 cups Lemon pastry cream
- as needed Rum
- as needed Pineapple or strawberries (optional)

Preparation – Single-serving Mimosa Cake
Let’s see how to prepare the single-serving cake.
After preparing the sponge cake, divide it into 2 or 3 layers depending on the height. Use the cookie cutters to cut the bases… cut the remaining sponge cake into small pieces. Once the lemon pastry cream is prepared and cooled, fill a piping bag with it. Soak the base with a little rum and pipe small dollops of cream. You can leave it like this or add fresh pineapple or strawberries. Cover with the sponge cake pieces and a little crumbled sponge.
Notes
You can also prepare them a bit earlier, for example in the morning for the evening; just be sure to store them in the refrigerator. Take them out half an hour before serving, otherwise they will be too cold.
