I prepared for unexpected guests a very quick dessert: the no-bake coffee crumble, creamy and truly delicious! For the base I didn’t use the usual plain cookies or cocoa ones but Gran Cereale chocolate cookies which I think give the dessert an extra edge, otherwise it might have tasted a bit flat and overly creamy.
These cookies that I sometimes use for breakfast have a particular, slightly crunchy texture and cut through the excess creaminess of the no-bake coffee crumble, at least to my clear palate!
NO-BAKE coffee crumble

Ingredients — NO-BAKE Coffee Crumble RECIPE
- cups cookies (I used Gran Cereale chocolate cookies)
- 1/2 cup butter
- 1 cup heavy cream (liquid)
- 1 1/2 cups mascarpone
- 2 tablespoons strong espresso (quickly prepared with instant coffee and hot water)

Preparation — NO-BAKE Coffee Crumble RECIPE
Put the cookies in the mixer and crumble them with the electric blades.
Pour everything into a bowl and mix well with the melted butter.
Line the bottom of a removable springform pan about 8 in with plastic wrap and pour in the crumb mixture, taking care to set aside about 3–4 tablespoons for decorating the top.
Also press some crumbs along the sides of the pan so they can better hold the filling, very important…
Press firmly and place in the refrigerator to set.
For the filling blend the mascarpone with the strong espresso, stirring well until creamy.
Personally I didn’t add sugar because I like the intense taste of coffee, but if you prefer add a couple of tablespoons of powdered sugar to the mixture.
Now gently fold in the whipped cream, mixing well with the sweet creams.
Remove the cookie shell of the no-bake coffee crumble from the refrigerator and fill the base with this delicately coffee-flavored cream.
Sprinkle the surface with the reserved cookie crumbs and refrigerate until serving time.
Simple, quick, no-bake and delicious—what more could you want??? Enjoy your no-bake coffee crumble—quick and tasty!
