Ingredients for pressure cooker zucchini risotto:
- 1 1/2 cups Roma rice
- 1 yellow onion
- 4 tbsp extra virgin olive oil
- 4 large light green zucchinis
- 1/4 cup dry white wine
- 2 3/4 cups vegetable broth
- to taste fine salt
- 3 tbsp butter
- 1/3 cup grated Parmesan cheese (optional)

Steps for preparing and cooking pressure cooker zucchini risotto:
Wash the zucchinis well, dry them, and cut off both ends. Then cut the zucchinis lengthwise in half, slice them again lengthwise, and dice into small pieces. Repeat with all zucchinis available.
Peel the onion and dice it finely, or alternatively, you can blend it.
In the pressure cooker, add extra virgin olive oil and, when hot, add the onion and sauté well. Then add the zucchinis, sprinkle with salt, and let them absorb flavors. Add the rice and toast it, then deglaze with white wine.
Once the wine has evaporated, add the broth (if not measured, it should cover the rice by two fingers), stir, and adjust salt.
Close the pressure cooker, ensure the valve is shut, then bring the cooker to pressure over medium heat. Once at pressure, reduce the heat to the minimum and cook for half the time indicated on the rice package.
Once time is up, turn off the heat, release the pressure, remove the lid, stir the risotto, and cream it with butter and some of the Parmesan cheese (if desired).
Serve the risotto immediately.
