From my dearest memories of a holiday in Trentino I keep the delicious taste of a simple and special dessert. A kind of sweet frittata with raisins and apple cubes inside that is served warm, accompanied by a lingonberry jam. And I couldn’t resist making it at home and I confess it won’t be the original recipe but it’s really, really good! Few simple ingredients and here is a dessert that simply cooks in a pan and wins everyone over with its simplicity. A pan cooking just like my Apple pancake cake and the Blueberry pancakes recipe. The Trentino sweet frittata is a simple and surprising dish, rooted in mountain peasant tradition. Soft, fragrant and slightly caramelized on the surface, this frittata holds all the sweetness of the apples, which soften when cooked until almost creamy, and the delicate note of the raisins, which give little touches of sweetness in every bite. The contrast between the golden exterior and the soft interior makes it irresistible. It’s a preparation that resembles a cross between an omelette and a rustic cake: it is cooked in a pan, just like the old recipes, when the oven was not always available. And if you prefer not to serve it with jam, a drizzle of honey will be fine! Ingredients for the South Tyrolean sweet frittata

  • 2 eggs
  • 2 tbsp + 1 tsp sugar
  • 2 tbsp milk
  • 1 1/2 tbsp butter
  • 1/3 cup flour
  • 2 tbsp raisins
  • 1 apple (medium)
  • 1/2 lemon zest (untreated)
  • 2 tbsp butter
  • 6 tbsp lingonberry (cranberry) jam
  • to taste powdered sugar (for decorating)

How to prepare the Sweet frittata with apples

  • First soak the raisins in warm water for 10 minutes. Clean the apple and cut it into small cubes. Separate the yolks from the whites. Whip the yolks adding the sugar. Add the milk and the grated zest of half a lemon.

  • Also fold in the apple cubes and the well-drained raisins. Mix with a spatula to incorporate them into the batter. Whip the egg whites until stiff and gently fold them into the mixture.

  • Generously butter a 9.5-inch (24 cm) skillet. Let it heat and pour in the batter. Level it and cover with a lid. Let it cook for 4–5 minutes over medium heat. Gently lift the edges with a spatula to check the browning on the bottom.

  • Flip the sweet frittata using a large plate and let it slide back into the buttered skillet to cook the other side for 3–4 minutes. Transfer it to a plate or platter and cut into squares. Decorate with powdered sugar and lingonberry (cranberry) jam

This dessert keeps in the refrigerator for 2 days in a container. Before serving, you can gently reheat it in the oven, in a pan or in the microwave to restore softness and aroma.

You can replace lingonberry jam with mixed berry jam, blueberry jam, raspberry jam or even strawberry jam.
