Ingredients for the puff pastry pie with pumpkin

  • 1 sheet puff pastry (rectangular)
  • 4 cups pumpkin
  • 1 white onion (medium)
  • to taste extra virgin olive oil
  • to taste salt
  • 3.5 oz speck
  • 7 oz mozzarella
  • 4 tablespoons milk
  • 3 tablespoons mixed seeds

How to prepare the Rustic pie with pumpkin and speck

  • Clean the pumpkin by removing the skin, seeds and internal fibers. Cut the pumpkin into small cubes. Cook the pumpkin in a pan with 2 tablespoons of extra virgin olive oil and the onion sliced thinly over medium heat, stirring often, for 10-12 minutes. Add a little salt to the pumpkin. Let it cool.

  • Spread the pumpkin over half of a rectangular sheet of puff pastry. Top the pumpkin with slices of speck and then with slices of mozzarella. Fold the other half of the pastry over and press around the edges to seal. Transfer the savory pie with pumpkin onto a baking sheet lined with parchment paper.

  • Brush the surface with milk and decorate with the mixed seeds. You can also use only sesame or flax seeds. Bake the pie in a preheated oven at 374°F (convection) for 25-30 minutes. If you use a conventional oven, bake it for 30 minutes.
