Ingredients for Jam Cookies
- 2 eggs (medium)
- 1/2 cup granulated sugar
- 6.5 tbsp butter
- 2 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 lemon zest (unsprayed (unwaxed))
- 2/3 cup raspberry jam
- to taste powdered (confectioners') sugar (for decorating)

How to prepare Jam-Heart Cookies
You can make the shortcrust pastry by hand or with the help of a mixer. Mix the softened butter, cut into small pieces, with the sugar and the flour. Add the eggs, the grated zest of half an unsprayed lemon and one teaspoon of baking powder. Quickly knead well until you obtain a soft but not sticky dough. Form a ball, wrap it in plastic wrap and let it rest in the refrigerator for 30 minutes.
Take the dough and form many balls the size of a walnut. Arrange them slightly spaced on a large baking tray lined with parchment paper. Press each ball in the center using the bottom of a small cup, a shot glass or simply a bottle cap.
With your index finger press lightly to create two close and symmetrical grooves so as to form a heart shape. Pour the raspberry jam (or the flavor of your choice) into the grooves you created.
Bake the jam cookies in a preheated conventional oven at 338°F for 16-18 minutes. Do not let them brown too much. Wait for them to cool before transferring them to a plate or platter and dust them to taste with powdered sugar.
