Ingredients for Chicken with mushrooms and pancetta
- 1.1 lb chicken breast
- 14 oz champignon mushrooms
- 1 onion (small)
- 3.5 oz smoked pancetta
- 2.1 oz black olives (pitted)
- 1 cup cherry tomatoes
- as needed extra virgin olive oil
- as needed salt
- 1 sprig basil
How to prepare Chicken alla boscaiola
Cut the chicken breast into small pieces. Clean the onion and slice it thinly. Clean the mushrooms by removing the earthy base. Wash them quickly or simply wipe them with a paper towel. Pour 3-4 tablespoons of extra virgin olive oil into a pan. Add the chicken bites.
Add the onion and the pancetta.
Add the mushrooms, sliced thinly, and stir. Let cook over medium heat, stirring often with a wooden spoon, for 6-7 minutes.
Wash the cherry tomatoes and cut them into small pieces. Slice the pitted black olives. Add the cherry tomatoes, a pinch of salt and the olives to the pan.
Stir with a wooden spoon and cover the pan with a lid. Lower the heat and let the Chicken alla pizzaiola cook for another 5-6 minutes.
Finally add some basil leaves.
