I admit it: Kinder drives me crazy. Everything that is Kinder, hazelnut, chocolate… for me it’s a constant temptation. And since I love the mimosa cake and I love everything that is Kinder, I couldn’t help but combine the two for such an important day as March 8 – International Women’s Day. Thus the Kinder mimosa roll was born: soft, creamy, super indulgent, with a Kinder center and a mimosa-effect decoration that instantly looks festive. A spectacular dessert, easy to make and winning from the first bite.

Ingredients

- 4 eggs
- 3 oz (about 1/3 cup) sugar
- 2.5 oz (about 1/2 cup + 1 tbsp) all-purpose flour
- 2.4 fl oz (about 1/3 cup) vegetable oil
- 4 tablespoons water (hot)
- chopped hazelnuts
- 3.5 oz (about 1/3 cup) mascarpone
- 2/3 cup whipping cream
- 4 tablespoons hazelnut spread
Steps

Let’s prepare the base: Separate the yolks from the whites. Whip the egg whites to stiff peaks with half of the sugar. In another bowl, whip the yolks with the remaining sugar.
Add the hot water and continue whipping until the yolks are pale and foamy. Add the oil.
Add the hazelnut paste, then the flour, mixing until combined.
Gently fold in the whipped egg whites with bottom-to-top motions. Pour the batter into the baking pan lined with parchment paper,
level it and sprinkle with chopped hazelnuts. Bake at 356°F for about 20 minutes. Remove from the oven and let cool.
Prepare the cream:
Place the mascarpone and hazelnut spread in a bowl and mix. Add the whipping cream and whisk until you obtain a soft, velvety cream.
Filling and assembly:
Trim the edges of the base (we’ll use them for the mimosa effect) and set them aside. Spread about 3/4 of the cream over the cooled base. Add the Kinder Bueno bars,
Add a little chopped hazelnuts and gently roll. Wrap the roll in parchment paper or plastic wrap and refrigerate for a few hours.
Meanwhile, cut the trimmings into small cubes. Take the roll out of the fridge and cover it with the remaining cream
decorate with the cubes to create the mimosa effect.
