The light molten cake with a soft center is butter-free and uses only 20 g of flour, perfect for a family Sunday breakfast when you can share it leisurely without rushing off to work.

For a truly light recipe I used defatted cocoa powder which contains only 1% fat!

As a sweetener I used erythritol, a natural zero-calorie sweetener!

Ingredients

  • 5.3 oz plain 0% fat yogurt (about 2/3 cup)
  • 2 eggs
  • 2 tbsp erythritol
  • 3.5 oz dark chocolate (80%)
  • 2 1/2 tbsp all-purpose flour (about 20 g)
  • as needed butter
  • as needed defatted cocoa powder
  • as needed powdered erythritol

Tools

  • Hand mixer
  • Air fryer
  • Microwave oven

Steps

  • In a bowl pour the erythritol and the eggs, beat for a few minutes with the whisks.

  • Add the yogurt and mix.

  • Melt the chocolate in the microwave and pour it into the batter.

  • Combine the ingredients well and finish by adding the flour.

  • Grease the molds with butter and dust with defatted cocoa powder.

  • Place the molds in the air fryer and set to 356°F for 8 minutes.
    If you don’t have an air fryer, the oven is fine for 10–12 minutes.
