Flaky Potato Plumcake

Ingredients

  • 1 lb 9 oz potatoes, peeled
  • 5.3 oz sliced bacon
  • 7 oz smoked scamorza, sliced
  • 3 tbsp grated Parmesan
  • to taste salt
  • to taste extra virgin olive oil

Tools

  • Mandoline
  • Loaf Pan

Steps

  • Peel and wash the potatoes, then slice them thinly with a mandoline.

  • Toss them with extra virgin olive oil and salt, then stir in the grated Parmesan.

  • Brush the loaf pan with a little oil.

  • Layer the potatoes inside the pan, placing slices of smoked scamorza and bacon between the layers. Bake at 392°F for 30–35 minutes: for the first 15 minutes cover with aluminum foil, then remove the foil and continue baking until golden.
