Tomini in green sauce, an easy and quick-to-prepare typical Piedmontese recipe.
For this recipe, we used the green sauce we make with our grandmother’s recipe, delicious and perfect also for anchovies in green sauce (another Piedmontese specialty) and for spreading on bread as our children do. For those who don’t know, this sauce is made with parsley leaves, oil, salt, anchovies, capers, and other ingredients.
Another key ingredient is tomino, not the semi-aged one (round shaped about 4 inches in diameter resembling brie with its white rind) but the fresh, extremely soft, and creamy one, ideal for many preparations.

A really quick recipe to prepare, the longest task is to prepare the green sauce. You can also find it ready-made in stores, but as a true Piedmontese, I recommend making it at home, a unique flavor. If you are using it only for this recipe, halve the quantities; otherwise, you can also use it for anchovies in green sauce, another Piedmontese specialty.
Cut the tomino into slices (found in both the deli department and the refrigerated section, it is a roll of fresh cheese with a short shelf life, also excellent served on bread crusts). With one 300-gram tomino, you get 8 slices.
Place the slices on a serving plate and top each slice with a tablespoon of green sauce, serve immediately or store in the fridge covering the plate with plastic wrap.
Tips:
If you prefer an even more flavorful version, you can sprinkle some hot chili pepper on the preparation, an explosion of flavors.
