  • 3 1/2 tbsp chia seeds
  • 3/4 cup rice milk
  • 1 tbsp maple syrup (or honey)
  • 1 1/3 cup fresh fruit (as desired, I chose kiwi and melon)
  • 1 tbsp lemon juice
  • to taste mint

How to make chia pudding

  • To make the vegan chia pudding for breakfast with kiwi and melon or with any seasonal fruit you prefer, place the chia seeds in a bowl and mix them with the rice milk or any plant milk you prefer and the maple syrup.

    Place in the fridge for two hours.

  • As soon as the chia pudding has thickened, dice the (cold) fruit you prefer and toss it with lemon juice to prevent oxidation. I chose kiwi and melon, but peaches, strawberries, apples, pears, cherries, etc. will all work.

    Fill the glasses alternating a layer of fruit with a layer of pudding and repeat with another layer of fruit.

  • Serve immediately or leave covered in the fridge with plastic wrap until ready to bring to the table, and garnish with mint leaves.

STORAGE NOTES AND TIPS

For a perfectly creamy texture, stir the mixture well about 10 minutes after the first preparation: this way the chia seeds won’t settle to the bottom.

You can replace the plant milk with whichever you prefer: almond, soy, oat or coconut to obtain a different flavor each time.

If you want natural sweetness, you can add a teaspoon of honey or maple syrup, or enrich the pudding with seasonal fresh fruit.

For an even more complete breakfast, top your chia pudding with homemade granola, nuts or coconut flakes.
