Peas with cooked and cured ham are a quick and tasty side dish, perfect to accompany main courses or to dress rice or pasta.
These peas are the early produce of this spring; I certainly spent more time shelling them than cooking them, but it was worth it — fresh produce is richer in vitamins and much more flavorful.
This is a quick recipe to prepare: simply season and cook in a pan with a nice fresh spring onion and in 10 minutes they’re cooked and ready to enjoy.
Take advantage of the season and bring all the flavor of spring to your table. Off-season you don’t have to give up this dish — it can still be made with frozen peas!

Ingredients
- 1 7/8 cups fresh shelled peas
- 1 spring onion
- 1 cup water
- 1.4 oz cooked ham
- 1.4 oz cured ham (prosciutto)
- to taste olive oil
- to taste salt
Preparation
To prepare Peas with cooked and cured ham, warm the olive oil in a pan, then lightly sauté the finely chopped spring onion. As soon as it is golden, add the shelled peas (washed and drained). Sauté, stirring, for a few minutes; then add the water and salt and let everything simmer slowly for about 10 minutes, stirring occasionally. If necessary, add a little more water.
After about 10 minutes, fresh and tender peas will be well cooked but still slightly al dente.
Dice the cooked ham and the cured ham, add them to the peas, sauté for a few more minutes, stir and let the flavors meld.
Transfer the peas to a serving dish and serve.Tips:
This recipe can also be made with frozen peas; the spring onion can be substituted with white onion and the ham with pancetta — choose according to your taste.
The peas can be served as a side dish, but cooked this way they are also perfect for dressing pasta or rice.
