Ingredients
- 1 lemon (organic)
- 4 eggs
- 3/4 cup + 2 tbsp cup granulated sugar
- 1/3 cup + 1 tbsp cup milk
- 7 tbsp tbsp butter
- 1 2/3 cups cup all-purpose flour
- 1/3 cup cup potato starch
- 1 packet baking powder
- powdered sugar (for decorating)
Preparation of the lemon paradiso cake
Cut the butter into pieces and let it soften.
Wash the lemon, dry it well, grate the zest and squeeze the juice.
In a large bowl put the eggs and the sugar and whisk them with electric beaters until you obtain a pale and fluffy mixture.Add the softened butter in pieces and the milk, continuing to mix with the electric beaters.
Add the strained lemon juice and then the grated zest.
Finally incorporate the sifted flour, potato starch and baking powder, mixing gently with a spatula using folding motions from bottom to top, until you obtain a smooth batter.Butter and flour an 8 2/3-inch diameter cake pan and pour in the prepared batter.
Bake in a preheated static oven at 338°F for thirty-five to forty minutes, checking doneness with the toothpick test not before at least half an hour has passed since the start of baking.
Remove from the oven and let cool completely in the pan, then transfer your lemon paradiso cake to a tray or serving plate and decorate as desired with powdered sugar before serving.
