- 3 potatoes
- 2 leeks
- 1/2 cup cooked chickpeas
- to cover water
- 2 tablespoons extra virgin olive oil
- to taste sea salt
- 1 pinch paprika

Steps
Wash the leeks and potatoes, peel the potatoes and cut them into small cubes. Trim the root and the green tops of the leeks, slice the white part.
In a pot add the potatoes and leeks, the aromatic herbs, enough water to just cover them and a little salt.
Cook for about 25 minutes.
Blend everything with an immersion blender directly in the pot. Taste and adjust seasoning if needed.
Add the cooked chickpeas, stir.
Serve with a drizzle of olive oil and a sprinkle of paprika or chili powder.

Variations
You can use sweet potatoes instead of regular potatoes, and change the type of legumes. It’s also excellent with cannellini beans.
You can make the same soup with sweet onions instead of leeks, but the flavor will be stronger.
You can add a teaspoon of rice miso when you turn off the heat.
Finally, besides chickpeas you can also add three spoonfuls of porridge.

I don’t recommend using unpeeled potatoes because the flavor would become too earthy.
