For this version, having little time these days to spend at the stove, I used ready-made gnocchi, specifically small gnocchi. If you prefer, however, you can also make them at home: they’re very simple and you can find the recipe on the blog. Since spring is approaching, I thought of using more spring vegetables, such as peas and carrots. The peas I used are frozen, but you can also use fresh ones. Moreover, you can prepare this tasty first course using the seasonal vegetables you prefer. Simple and quick to prepare. After sautéing the gnocchi with the carrot and pea sauce, I gratinated them in the air fryer for a few minutes using the grill function, scattering plenty of grated cheese over the surface. It only takes a few minutes, because the air fryer, unlike the oven, does not require preheating. Of course nothing prevents you from using the oven’s grill function. - 14 oz small potato gnocchi
- 1/4 cup onion
- 1 3/4 tbsp extra virgin olive oil

Steps
To prepare the vegetable gratinated gnocchi, first clean the carrots. Peel them with a peeler and wash them under running water to remove any soil. Then pat them dry with paper towels and cut them into small cubes. Next, clean the onion and finely chop it. Sauté it in the pan with the oil for a few moments over low heat. Then add the carrots and peas, season with salt and cook covered for 8 minutes over low heat, stirring occasionally and adding a little water if needed.
Meanwhile, cook the gnocchi in plenty of salted water. As soon as they float to the surface, transfer them into the pan with the sauce. Toss them for a couple of minutes over high heat, stirring and adding a little of the gnocchi cooking water.
Transfer half of the gnocchi with vegetables into a baking dish, sprinkle half of the grated cheese over them and add the remaining gnocchi. Sprinkle the remaining cheese over the surface and add a dusting of pepper.
Gratinate them in the air fryer at 392°F using the grill function for 3 minutes, or until a golden crust forms on the surface, and serve.
