Chickpea and Vegetable Fritters

Chickpea and vegetable fritters — an easy, quick, vegetarian and super tasty recipe. In just 10 minutes and with simple ingredients we all have at home, we prepare wonderful chickpea fritters. They can be cooked in a pan with a drizzle of extra virgin olive oil, or in the oven or in the air fryer. The result is delicious golden, fragrant chickpea fritters that are soft inside and crispy outside, aromatic and tempting, perfect also as an appetizer, and can be made in a gluten-free version for those intolerant to gluten. For this recipe I used the vegetables I had at home but you can vary with spinach, savoy cabbage, celery and, if you like, scent the batter with aromatic herbs such as chives, parsley or cilantro and spices like curry and chili.

Great for a family lunch or dinner, to be completed with a mixed salad or a side of cooked vegetables. They are also excellent as finger food.
