- 2 1/8 cups all-purpose flour (tipo 00)
- 1/2 cup granulated sugar
- 2 tbsp orange zest
- 2 eggs
- 1/2 cup plain yogurt
- 1/3 cup orange juice
- 6 tbsp sunflower oil
- 1 packet baking powder

Recipe for Soft Yogurt and Orange Muffins
Start preparing the yogurt and orange muffins by combining in a bowl the all-purpose flour, granulated sugar and baking powder.
Set aside for the moment.
In another bowl break two medium eggs.
Add the zest of one untreated orange and a pot of plain yogurt (single-serving size).
Alternatively, orange, lemon or vanilla yogurt will also work.
Mix everything with a whisk or with an electric mixer.
Add the orange juice; I used a variety with red flesh (blood orange).
Mix again with the whisk or the mixer.
Pour the sunflower oil in a thin stream while continuing to mix.
Add the dry ingredients to the wet ingredients.
Do this in two or three additions.
Mix with the whisk or a spatula until you get a smooth, lump-free batter.
The consistency should be fairly thick.
Place paper liners into the cavities of a muffin tin.
Transfer the batter using a spoon or better yet an ice-cream scoop if you have one.
Fill the liners about two-thirds full.
Bake the yogurt and orange muffins in a preheated oven on the conventional (static) setting at 356°F for 25 minutes.
Remove from the oven and let cool.
