Sandwich bread panzerottini are delightful finger-food appetizers, easy and quick to prepare.
Sandwich bread, cooked ham (or another cured meat of your choice, or vegetables or what you prefer), scamorza (or provolone) and little else, cooked as you like: fried, baked or in an air fryer, ready in no time and perfect for any occasion.

Ingredients
- 10 slices sandwich bread
- 3 oz cooked ham
- 2 oz scamorza (or provolone)
- 2 eggs
- breadcrumbs
- salt
Preparation of the sandwich bread panzerottini
Take the bread and flatten it with a rolling pin so it becomes more elastic.
With a round cutter about 3 1/8 in (8 cm) in diameter, cut a disc from each slice of bread.
Beat the eggs in a small bowl with a pinch of salt.Cut the scamorza into cubes and the cooked ham into pieces.
Fill the center of each bread disc with a little ham and a few scamorza cubes.
Brush the edges of the bread with a little beaten egg and fold the discs into half-moons, pressing the edges well so they stick.
When you have prepared all the panzerottini, put some breadcrumbs on a plate.Dip the sandwich bread panzerottini into the beaten eggs, covering them on all sides, and then into the breadcrumbs, pressing them on all sides so they adhere well.
You can fry them, or bake them in a conventional oven at 392°F for twenty minutes, or cook them in an air fryer at 392°F for ten minutes, turning them halfway through and spraying them with a little oil.
Serve them hot.
