Creamy Spinach Risotto

How good is this creamy spinach risotto. A very simple dish, perfect for beginners in the kitchen and a balanced dish, thanks to the addition of cheese. It is also very nutritious thanks to the spinach, which will become very sweet and therefore pleasant even for children.

It is also very quick to make: it is prepared like a classic risotto while the spinach only needs to be blanched separately. Really child’s play.

And the result is finger-licking good. I’m only sorry I didn’t take more photos; apologies but I was in a hurry to write the recipe.

Ingredients

  • 2/3 cup Arborio rice (or brown rice)
  • 1.1 lb spinach (or frozen)
  • 1 shallot (or 1 small onion)
  • 1 teaspoon extra virgin olive oil
  • 2 tbsp light cream cheese (light, like Philadelphia Light, or you can use ricotta)
  • 1/4 cup grated Parmesan cheese
  • as needed vegetable broth
  • to taste salt and pepper
  • Points per serving = 8 WW points

Preparation

The first thing to do is prepare the vegetable broth. I use a granulated broth that I dissolve in boiling water. Keep the broth hot over low heat.

  • First of all, wash the spinach well and wilt it in a pan without adding additional water. As soon as it has wilted, drain the excess water, let it cool and chop it into pieces.

    In the same pan, sauté the shallot sliced in a teaspoon of oil, then add the rice and toast it for one minute.

    Cook the risotto in the classic way, adding the hot vegetable broth little by little when the rice dries out. Near the end of cooking, add the spinach to the rice and continue until the rice is cooked.

    At the end, adjust the salt and then finish the risotto by stirring in the cream cheese and 2 tbsp of grated Parmesan. If you like, add freshly ground pepper.

  • Wait at least 5 minutes and our creamy spinach risotto is ready to be served: add a teaspoon of Parmesan per plate when serving.

    What a wonder—aren’t the simplest dishes often the most delicious? I love making risottos; it relaxes me by the stove.

  • If you want to make it richer you can brown some lean speck or diced cooked ham together with the shallot; in that case you will of course have to add extra Weight Watchers points.
