Dunkable Chocolate Chip Biscuit Rings

Ingredients for the chocolate chip biscuit rings

  • 2 1/3 cups all-purpose flour (type 00)
  • 1/3 cup finely milled durum wheat semolina
  • 1 egg
  • 1 egg yolk
  • 1/2 cup granulated or cane sugar
  • 1/3 cup vegetable (seed) oil
  • 1/4 cup milk
  • Half packet baking powder
  • grated lemon zest
  • 1 teaspoon vanilla extract
  • 1 pinch fine salt
  • 1/2 cup chocolate chips (about 3 oz)
  • as needed granulated sugar for the outer surface

Steps for the chocolate chip biscuit rings

  • First, you can use a large bowl and mix everything by hand or use any food processor. In a bowl, add the egg and the yolk, the granulated sugar and, using a hand whisk, beat for a few minutes. Then add the oil, the milk, the grated lemon zest and the vanilla extract and mix again for a few minutes. Finally add both flours, the salt and the baking powder and mix until the dough comes together completely. Then add the chocolate chips and knead with your hands until you obtain a homogeneous, soft dough ball.

  • Take portions of about 1 oz (around 30 g) of dough and roll them on the work surface under the palms of your hands until you obtain long little ropes which you will join and close to form rings. Then roll them in granulated sugar and place them on a baking sheet lined with parchment paper (well spaced apart). Bake in a preheated conventional oven at 338°F for 15 minutes or until golden. Turn off, remove from the oven and let cool.

STORAGE, TIPS AND NOTES

The dunking cookies can be stored in airtight containers or in a tin for several days but I assure you they disappear quickly. You can also omit the chocolate chips and use raisins instead or enjoy them plain.
