Apple and Almond Sugar-Free Cookies, Dr. Berrino’s Recipe

The apple and almond sugar-free cookies, a recipe by Dr. Berrino, a famous Italian doctor specialized in pathological anatomy and later in cancer epidemiology, author of many scientific publications and books, many of which are related to food and wellness. He participates in many TV shows where he talks about healthy eating, to find a balance between healthy eating and lifestyle.

The cookies we are proposing are made with only three ingredients: apples, almonds, and sesame seeds or almond flakes (our small change), without added sugars, a true delight for the palate and our health.

Ingredients for Apple and Almond Sugar-Free Cookies:

  • 2 yellow apples
  • 8.8 oz toasted almonds (with skin)
  • 1 pinch sea salt
  • as needed sesame seeds
  • as needed almond flakes (our variation)

Steps for Preparing and Baking Apple and Almond Sugar-Free Cookies:

  • Take the apples, peel them, cut them in half, and remove the core, then chop them into small pieces and place them in a small pot, add 2 teaspoons of water and cook until they start to break down.

    Transfer the cooked apples to a plate and mash them well with a fork to obtain a puree, let them cool down.

  • Put the almonds in the mixer and blend until you get a flour (alternatively, you can use almond flour), we blended a handful of almonds not too finely and then added them to the flour so that when you eat the cookies you can feel some almond pieces, giving it more crunchiness.

    Add the ground almonds to the mashed apples, add a pinch of sea salt and mix well to get a homogeneous mixture.

  • Place some sesame seeds on one plate and almond flakes on another (this is a change we made, as not everyone in the family likes the taste of sesame seeds).

    Take some dough (about 0.9/1 oz), form a ball and roll it in the sesame seeds or almonds, place it on a baking tray lined with parchment paper, repeat the same procedure with all the available dough (about 15/16 cookies depending on the size).

  • Bake in a preheated oven at 356°F (static) for 20 minutes.

    Remove the cookies from the oven and let them cool before consuming.

Advice:

If you don’t like almonds, you can use other nuts, such as hazelnuts, pistachios, or walnuts.
