Puff Pastry and Ladyfingers Cake

The puff pastry and ladyfingers cake is a very indulgent dessert, easy and quick to prepare.

Puff pastry, ladyfingers and a few simple ingredients used raw, then everything baked to create a cake with different textures united in an irresistible combination: a crunchy shell, a soft and fragrant filling, almost creamy — a cake perfect for an afternoon snack with a cup of tea or milk, or as a dessert. Although this cake may resemble the Beneventana tart, it differs because the base here is puff pastry (not shortcrust) and the filling is raw, while in the Beneventana tart the milk is boiled and it contains liqueur.

Ingredients

  • 1 sheet puff pastry (round)
  • 3.5 oz ladyfingers (about)
  • 3 eggs
  • 7 tbsp granulated sugar (about 90 g)
  • 1 7/8 cups milk (about 450 ml)
  • orange zest (grated, or lemon zest, or a pinch of cinnamon, or a packet of vanilla powder)
  • powdered sugar (for dusting)

Preparation of the puff pastry and ladyfingers cake

  • Unroll the puff pastry and place it, with the parchment paper it comes with, into a 9.5-inch diameter cake pan.
    Press it with your hands so it adheres to the pan and trim off the excess pastry from the edges.

  • Arrange the ladyfingers on the bottom of the pastry side by side without leaving gaps, trimming the ladyfingers if necessary.
    In a bowl, add the eggs, the sugar, the grated orange zest (or lemon, or a pinch of cinnamon, or a packet of vanilla powder), and whisk by hand until the mixture is homogeneous.

  • Add the milk in a thin stream, continuing to whisk, then pour the mixture into the pan ladle by ladle. Bake in a preheated convection oven at 356°F for thirty-five minutes.
    Remove from the oven and let your puff pastry and ladyfingers cake cool completely before decorating as desired with powdered sugar and serving.
