Ingredients for 8 balls

  • 3.5 oz light ricotta
  • 3.5 tbsp unsweetened cocoa powder
  • 1 tbsp shredded coconut (plus extra for coating)
  • 2 drops stevia drops

Preparation

  • To prepare the light cocoa and coconut balls, start by putting the ricotta in a bowl along with 2 drops of liquid stevia. Whisk with a hand whisk or, alternatively, a fork for a few minutes until the mixture is soft and creamy.
    Then add the shredded coconut and the cocoa powder, mixing well until you get a homogeneous dough.
    Portion the mixture with a spoon and shape the balls with your hands. Roll them in the shredded coconut to coat evenly.
    Place the balls on a tray and let them rest in the refrigerator for at least 15 minutes before serving so they firm up and are ready to enjoy.

Tips and storage

Light cocoa and coconut balls keep in the refrigerator for about 2 days, staying soft and pleasant to eat.

If you don’t have stevia or prefer to use sugar, you can add up to one teaspoon, preferring brown sugar over granulated sugar.
For powdered stevia, a small pinch is enough to sweeten the mixture without weighing it down.
