Steps to prepare homemade eggplants
Preparing eggplant mini pizzas is really simple. First, wash the eggplants well.
Dry the eggplants with a kitchen cloth.
Cut into round slices 0.4 inches thick. Place the eggplant slices next to each other on a baking sheet lined with parchment paper. Make small crosswise cuts on the surface of each slice with a knife, without going all the way through. This step facilitates cooking and makes the mini pizzas more flavorful. Brush each eggplant slice with a drizzle of extra virgin olive oil and add a pinch of salt to each.
Wash the cherry tomatoes well, cut them in half or quarters if they are large.
