Ingredients
- 5 eggs
- 1 cup granulated sugar (for the sponge)
- 1 cup + 2 tbsp 00 flour (all-purpose flour)
- 3/8 cup (about 1.8 oz) potato starch
- 2 tbsp instant coffee
- 1/2 cup + 2 tbsp granulated sugar (for the syrup)
- 1/3 cup water
- egg yolks
- 1 cup + 2 tbsp (about 9 oz) mascarpone
- 3 oz (about 80 g) ladyfingers
- 1 cup (about 8.5 fl oz / 250 ml) cold whipping cream

Let’s prepare the coffee sponge cake:
Whip the eggs with the sugar until you get a light, fluffy mixture. Dissolve the instant coffee in a very small amount of hot water.
Add the dissolved coffee to the mixture. Gently fold in the flour and baking powder.
Pour into a pan lined with parchment paper and bake at 356°F (180°C) for 40–50 minutes. Let cool completely.
Prepare the tiramisu cream:
Bring the sugar and water to 250°F (121°C). Whip the egg yolks and pour the hot syrup in a thin stream while continuing to whip. Add the mascarpone.
Add the cream and whip until you obtain a smooth, velvety cream.
Assembly of the mimosa tiramisu:
Cut the cold sponge cake into three equal layers. Cut one layer into cubes for the decoration.
Soak the first layer with sweetened coffee and spread half of the cream. Dip the ladyfingers briefly in the coffee.
Add a layer of coffee-soaked ladyfingers and cover with the second sponge layer. Soak this layer as well.
Coat the entire cake (top and sides) with the remaining cream. Arrange the sponge cubes on top and along the edges to create the mimosa effect. Refrigerate for a few hours before serving.
