  • 2 fillets cod
  • 3 potatoes (medium-small)
  • to taste Leccino olives
  • to taste cherry tomatoes
  • 2 tablespoons extra virgin olive oil

Steps to prepare cod fillets with stewed potatoes in a pan

  • Peel the potatoes, cut them into chunks, rinse them well and drain. Put the oil in the pan, heat it and add the potatoes, season with a little salt and start cooking them with a lid on, being careful to turn them so they don’t burn. Cook until they are golden, about 7-8 minutes.

  • Meanwhile prepare the fillets — I used frozen ones; since they are covered with a layer of ice I quickly run them under cold water to remove the ice layer, cut them into pieces and add them to the pan over low heat.

  • Also add the olives and the washed cherry tomatoes cut in half, and cook everything together for a few minutes, always with the lid on. If needed, add a little water.

  • In a few minutes the cod fillets with potatoes in the pan will be ready; if you like you can add some chili pepper during cooking and a bit of chopped parsley at the end.
