The ACE cake with olive oil is a very fragrant dessert that captures all the freshness of citrus fruits in a light, fluffy texture.

The cake with orange, lemon and carrots is inspired by the famous ACE drink. It wins you over at the first bite thanks to its perfect balance between sweetness and citrus notes.

Ingredients for the ACE cake

  • 1 cup almond flour
  • 1.25 cups type 1 flour
  • 3 eggs
  • 1.75 cups carrots
  • 1 lemon
  • 1 orange
  • 3.5 tbsp extra virgin olive oil
  • 6.5 tbsp erythritol or cane sugar
  • 1 packet baking powder

Steps to prepare the ACE cake

Start by peeling the carrots with a peeler. Grate them with a grater and set aside.

In a bowl break the eggs and add the erythritol or cane sugar, then beat with the electric beaters until fluffy. Then add the extra virgin olive oil in a stream, continuing to beat, the juice of half a lemon and of one orange, their zests and the grated carrots. Finally fold in the almond flour, the type 1 flour and the baking powder, mixing with a spatula from top to bottom so the eggs don’t deflate.

Line a springform pan with removable bottom 8 in with parchment paper and pour in the batter. Level it and bake at 356°F for about 30 minutes. Before removing from the oven, do the toothpick test.

In a air fryer cook at 320°F for 35–40 minutes. Do the toothpick test before removing. If you see it browning too quickly on the outside, lower the temperature to 302°F.

Storage of the ACE cake

The ACE cake can be kept at room temperature for 3-4 days, under a glass dome or well wrapped in cling film, away from heat and humidity. If it’s very hot, it’s better to store it in the refrigerator, in an airtight container, where it will keep up to 5 days: before serving, however, let it sit at room temperature for at least 30 minutes to regain all its softness. To keep it longer, you can also freeze slices, individually wrapped in cling film and then in a freezer bag; it keeps for up to 2 months and just thaw at room temperature for a few hours to enjoy it like freshly made.
