Quick pan-fried carrots are a tasty vegetable side dish, easy and quick to prepare.

Quick pan-fried carrots are a simple way to bring a light but flavorful side to the table, able to pair with many dishes without being boring. The carrot is a vegetable with ancient origins, appreciated not only for its sweet and delicate taste but also for the bright orange color that livens up the plate. When cooked quickly in a pan it keeps a pleasantly tender yet slightly crunchy texture, avoiding that overly soft effect that can be unappealing.
Carrots are rich in beta-carotene and also contain fiber and antioxidants useful for general well-being. Quick cooking helps preserve much of their properties, especially if not prolonged excessively. In addition, pan cooking enhances the natural sweetness of the vegetable thanks to a slight surface caramelization. Carrots prepared this way are perfect with meat mains, fish or vegetarian dishes.

Ingredients

  • 14 oz carrots (about 3 1/4 cups sliced or 3-4 medium carrots)
  • paprika
  • extra virgin olive oil
  • salt

Preparation of quick pan-fried carrots

  • Peel the carrots and cut them into small pieces.
    Place them in a nonstick pan and dress with two tablespoons of extra virgin olive oil, toss well and then put the pan on the heat.

  • Let cook for about five minutes without stirring over medium heat: they should slightly brown on the bottom.
    Stir and add about 1/4 cup water, a little at a time.

  • Cook for another ten minutes or so, until the carrots are tender but not falling apart.
    Turn off the heat and season with salt and paprika, mixing well to coat them thoroughly.
    Serve your quick pan-fried carrots.
