These delicious chicken croquettes with sesame are a complete main course, loved by the whole family, especially children. They are simple croquettes made with boiled chicken — it can be breast, thigh or whole — combined with mixed vegetables and then wrapped in crunchy sesame seeds.

Chicken croquettes with curry and sesame are also great served as an appetizer or starter; they evoke distant Indian flavors and can be shaped however you prefer. Round, flat or like classic croquettes, they will always be tasty and appetizing.

Serve them hot or cold accompanied by one or more sauces, such as egg-free yogurt mayonnaise, or aioli sauce, or the classic carrot sauce.

Ingredients

  • 1 lb 2 oz chicken (boiled, can be breast, thigh, or whole)
  • 2 cups mixed vegetables (potato, onion, carrot, celery)
  • 6 tablespoons breadcrumbs
  • 1 egg
  • curry (1 1/2 teaspoons)
  • black pepper (1 pinch, freshly ground)
  • 1 pinch garlic powder
  • to taste salt
  • to taste sesame seeds
  • sunflower oil (for frying)

Preparation

  • 1 – Make the croquettes using any skinless part of the chicken, breast, thigh or whole, boiled in salted water together with the vegetables: potato, onion and carrot. Alternatively, you can braise the chicken and vegetables in a pan.

    2 – When cooked, drain the vegetables and debone and cut the chicken into small pieces.

    3 – First blend the chicken and vegetables in a food processor, then add the egg, curry, garlic powder, freshly ground pepper, breadcrumbs and blend again for a few seconds.

    4 – Taste the mixture and if necessary add a pinch of salt, then let it rest in a bowl for at least 20 minutes.

    5 – In a small bowl prepare a generous amount of sesame seeds to coat the croquettes.

    6 – Scoop a tablespoon of the mixture and shape the chicken croquettes. Roll them directly in the sesame seeds and then fry them in hot oil for a few minutes, until golden.

    7 – Drain the croquettes and place them on a sheet of absorbent paper to remove excess oil. They can be served hot or cold.
