Luna Park donuts soft and quick are delicious ring-shaped fritters you can make any time you feel like it; they are essentially the ring version of the famous Luna Park fritters, crispy outside and soft inside.
The dough for these Luna Park donuts does not require a long proofing time; it’s ready in about an hour — just shape into rings, fry in plenty of hot oil and then roll in sugar.
Also, since the dough is neutral and similar to focaccia dough, you can make them sweet or plain (without sugar) and serve them with savory snacks. Alternatively, you can try the sweet puffs, which are also soft and quick to make.

Ingredients
- 4 cups type 0 (all-purpose) flour
- 1 1/2 cups water (lukewarm)
- 0.9 oz fresh baker's yeast (1 whole cube (25 g) — about 1 standard active-dry yeast packet (2 1/4 tsp, ~7 g) as an alternative)
- 2 1/2 tsp sugar ((about 10 g))
- 1 3/4 tsp salt ((about 10 g))
- 3 tbsp olive oil ((about 40 g))
- as needed sunflower oil (for frying)
- as needed sugar (for dusting the fritters)
Preparation
Place the lukewarm water in a large bowl and crumble in the fresh yeast. Add the oil and sugar and let it dissolve for a few minutes.
Add the sifted flour and mix the dough. Finally add the salt and, after kneading the mixture, form a ball of dough and let it rise in the bowl covered with a lid. When the dough has doubled in volume, after about 1 hour, it is ready.With oiled hands, transfer the dough to a lightly floured work surface and divide it into 7–8 equal pieces. Shape each piece into a ball and flatten it, then use a round cutter to create the hole in the center of the disc.
In a tall pan for frying, heat the oil and when it is very hot drop the donuts in one at a time. Fry them on both sides until golden brown, then drain them on paper towels to remove excess oil.
Roll the Luna Park donuts while still warm in sugar and serve. You can also leave them plain (without sugar) and serve with savory snacks.
If you want to try this wonderful dough in another way, use it to make a sheet-pan pizza topped as you like and bake it in the oven for 15 minutes at 482°F.
