Mimosa Tiramisu

Ingredients

  • 20 savoiardi (ladyfingers)
  • as needed milk
  • as needed strawberries
  • as needed lemon (juice)
  • 7/8 cup mascarpone
  • 1 cup whipping cream (sweetened)
  • drops lemon extract (a few)
  • lemon zest (grated)
  • Half as needed lemon (juice)
  • as needed powdered sugar (optional)

Steps

  • Prepare the cream by placing the mascarpone and the whipping cream in a bowl.
    Whip with electric beaters. Add the grated lemon zest, the juice of half a lemon, the lemon extract and, if desired, a little powdered sugar. Mix everything well.

  • Cut the strawberries into cubes, keeping a few aside. Add 1 tablespoon of sugar and the juice of half a lemon.

  • Arrange the first layer of ladyfingers in a baking dish, dipping them in milk.

  • Spread a generous layer of lemon cream. Place the strawberry cubes on top.

  • Cover with another layer of milk-dipped ladyfingers. Cover with another layer of cream.

  • Top with some milk-soaked ladyfingers cut into cubes. Garnish with strawberries as desired.
