Ingredients

  • 1 3/4 cup all-purpose flour (the one you usually use)
  • 4 eggs
  • 3/4 cup + 2 tbsp granulated sugar
  • 3 tbsp + 1 tsp vegetable oil
  • Half packet (≈2 tsp) baking powder (for cakes)
  • 2 tbsp lemon juice
  • 1/2 cup pastry cream
  • 3 tbsp + 1 tsp whipping cream
  • 1.8 oz (about 1/3 cup) almonds
  • 2 egg whites

Steps

  • Prepare the pastry cream and let it cool, then whip the cream and fold the two mixtures together.

  • Beat the eggs with the sugar using electric beaters until they double in volume, then gradually add the flour with the baking powder, alternating with the oil and the lemon juice.

  • Pour the batter into a 500 g (≈18 oz) dove mold, add the cream by spoonfuls, bake in a preheated oven at 356°F for about 35 minutes.

  • Grind the almonds into a flour. Whip the egg whites until stiff, then add the ground almonds and one tablespoon of sugar.

  • Remove the dove from the oven and spread the egg-white mixture on top.
    Turn the oven grill to 401°F, place the dove under the grill and bake for 5 minutes until golden.
