I had a roll of puff pastry in the fridge and a few ingredients to use up, so I improvised these PASQUALINE TARTLETS, an appetizer in 5 minutes, and I must say they were an incredible surprise. Crispy on the outside and soft inside, with that creamy and flavorful filling that recalls the classic torta pasqualina but in a super quick single-portion version, perfect to serve even when you have last-minute guests.

The great thing about these PASQUALINE TARTLETS appetizer in 5 minutes is that they are very easy to prepare and really make an impression on the table. They are perfect for Easter lunch, but also for Easter Monday or an aperitif with friends.

Ingredients

  • 1 roll puff pastry
  • 6 eggs
  • 2 oz chard
  • 2 oz pancetta
  • 1 cup ricotta

Steps

The quantities are a bit approximate; the sizes of the tartlets will obviously depend on your mold and therefore the filling weight will also change.

  • Cut the puff pastry with a 4-inch cutter (about 10 cm) or a milk glass and place it inside a tartlet mold about 2 inches high (about 5 cm), or adapt it to your mold.

  • Sauté the chard in a pan with a drizzle of oil for 2–3 minutes; you just need to toss it quickly.

  • Work the ricotta in a bowl with the pancetta, salt and pepper to taste, mix and spread a layer on the bottom of the tartlets.

  • Add the chard, then crack an egg over the vegetables; if the egg seems too large you can remove a bit of the white.

  • Cut the puff pastry with a glass to get discs to cover everything; do not press to seal the edges, it is not necessary.

  • Bake at 356°F for about 15 minutes, until they are golden.
